Understand the HACCP and food safety improvement in restaurant

HACCP, or hazard analysis and critical control points, a set of guidelines and procedures relating to food safety which was originally developed by NASA for astronaut food in 30 years.  NASA need food safety program with "zero tolerance" to protect astronauts from the disease while in food-borne space.  One can imagine the consequences of bad sandwich.

Anyway, most restaurants to ensure the safety of food products and components used in kitchens prepared these guidelines.

HACCP is unique because it focuses on the analysis of the problem points in food production, and develop ways to address those threats rather than testing final products for food-borne diseases.

Father, you are probably familiar with the guidelines for HACCP.  This information aims to be a quick refresher course on all aspects of effective HACCP program.  Of course, various local health standards in different regions of the country their own guidelines for food service, and should always follow these guidelines to anything here.

HACCP system and internationally recognized.  HACCP principles:

1) do food safety risk analysis in the preparation and production of food products in the commercial kitchen.  Three hazard categories include biological (pathogens such as bacteria or viruses), chemical (toxic substances or toxic factors) and physical (exotic objects).

2) select HACCP management of these three types of risk.  Control points include most common kitchen commercial heating and cooling, food preparation and service products.  To use diploma front designed restaurant restaurant equipment and supplies to make sure the tools in your kitchen with safety in mind.

Also remember HACCP system aims to cover all the steps in the process of food from harvest for consumption, even though the restaurant may not become involved until the end of that process, we should still try to identify problem points that occur before the product ever come through your door.  Make sure you know your suppliers of food and food safety procedures.

3) identifying critical limits of food passing through a critical control point.  For example, cooked food must reach 140 degrees Fahrenheit, etc.

4) a system to monitor critical limits and ensuring that they are being achieved.  Infrared heat is the key to ensure that food reaches an important level of 140.  Data recorders monitor temperature fluctuations over time-in refrigerators or freezers.  Whatever the circumstances, critical limits needed to record and quantify in order to understand if you do not meet critical points addressed in the analysis phase.

5) have procedures to address problems at critical limits had not been achieved.  The whole point of a important critical points in the process of preparing food to spot potential problems immediately.  Once the system is working correctly, and actually find the problem, you need to address them.

6) an effective authentication system for any software HACCP registration data such as time, temperature and problems.  Without such documentation, you have no way to identify problems in your food safety program and document good practices of your HACCP for health inspectors.

Download modern food safety equipment such as data recorders can be connected directly to a computer and temperature automatically into a database.  Take advantage of this technology does not give you the time, but makes your safety program more effective.

Food safety control in restaurant your key to success for anyone in the food service industry.  HACCP program effectiveness of good business practice, and will keep your customers safe and happy health inspector.
